I fear I’ve officially entered my English muffin era… and I’m not leaving anytime soon.
I told myself I wanted to make a new homemade English muffin + butter combo every single week this spring, and somehow this one might be my favorite yet. Like I am actually so obsessed.
These are soft, fluffy, perfectly chewy, loaded with melty white cheddar, and have the most insane flavor from caramelized onions. It’s rich, slightly sweet, savory, and just feels so elevated.
And then we add hot honey butter into the mix?? Yeah. It’s over.
Also… quick side note… this one as a breakfast sandwich?? Life changing. Egg, bacon, white cheddar, a little spicy mayo… I’m not kidding when I say I think about it constantly.
So yeah. You need these immediately.

Ingredient Breakdown:
For the Caramelized Onion White Cheddar English Muffins:
- Whole Milk (1¼ cups, warmed to 100–110°F)
Warm milk activates the yeast and helps create a soft, tender dough. The temperature matters here because too hot will kill the yeast and too cold won’t activate it. Whole milk adds richness and improves the texture. It’s what gives you that soft, fluffy interior. - Active Dry Yeast (2 teaspoons)
This is what gives the muffins their rise and airy texture. Blooming it in warm milk ensures it’s active and ready to go. You’ll know it’s working when it becomes foamy. This step is essential for proper dough development. - Unsalted Butter (3 tablespoons, melted)
Butter adds richness and flavor to the dough. It also helps create a soft, tender crumb. Using melted butter makes it easy to incorporate evenly. It adds that bakery-style feel. - Honey (2 tablespoons)
Honey adds a subtle sweetness that balances the savory onions and cheese. It also helps feed the yeast and supports browning. The flavor works perfectly with the hot honey butter later. It ties everything together. - Egg (1 large)
Egg adds structure, richness, and helps bind the dough. It also contributes to a softer texture. Make sure it’s room temperature so it mixes smoothly. This helps create a cohesive dough. - Bread Flour (3¼–3½ cups)
Bread flour gives these muffins their signature chewy texture. It has a higher protein content which helps build gluten. Start with less and add more as needed. The dough should feel soft but not sticky. - Salt (½ teaspoon)
Salt enhances all of the flavors and balances everything out. Especially important with cheese and caramelized onions. Without it, everything would taste flat. Always include it. - Yellow Onion (1 cup, finely diced, caramelized)
This is where all the flavor comes from. Cooking the onions low and slow for 35–40 minutes brings out their natural sweetness and deep, rich flavor. They become soft, golden, and slightly jammy. It completely transforms the muffins. - White Cheddar Cheese (4 oz, shredded)
White cheddar adds a sharp, rich, melty flavor. It pairs perfectly with the caramelized onions. Shredding your own gives the best melt. It makes these feel super elevated. - Cornmeal (for dusting)
Cornmeal gives that classic English muffin exterior. It prevents sticking and adds a subtle texture. It’s what gives you that bakery-style finish. Don’t skip it.
For the Hot Honey Butter:
- Heavy Cream (1 cup)
This is how you make homemade butter and it’s honestly so fun. Whipping separates the butter from the buttermilk. The result is fresh, creamy butter that tastes unreal. Totally worth it. - Honey (2 tablespoons)
Honey adds sweetness and balances the savory muffins. It pairs perfectly with the cheddar and onions. It also enhances the flavor of the butter. You can adjust to taste. - Crushed Red Pepper (to taste)
This is what turns it into hot honey butter. It adds just the right amount of heat to balance the sweetness. You can adjust depending on your spice preference. It gives that sweet + spicy combo that’s so addictive. - Flaky Sea Salt (optional)
Adds the perfect finishing touch. A little salt enhances both the sweetness and spice. It makes everything pop. Highly recommend.
